Vietnamese Vermicelli Noodles

Sensational noodle bowl with grilled shrimp, grilled chicken, pork, carrots, lettuce and onion with fish sauce.

Ingredients

  • 1 cup rice noodles
  • 3 medium shrimp
  • 3 oz pork
  • 3 oz chicken breast
  • 1/2 cup chopped grated carrot
  • 1/2 cup shredded or chopped lettuce
  • 4 tbsps fish sauce
  • 1/2 cup chopped green onion

Directions

  • Grill pork and chicken and slice into narrow 2" strips, and grill shrimp on skewer, all over a charcoal grill.
  • Boil vermicelli rice noodles for 1 minute, drain and put in large soup bowl.
  • Add grated carrot, shredded lettuce and chopped green onion.
  • Add grilled meat and shrimp.
  • Serve with Vietnamese fish sauce.
