A Fast Smash version of Spanish rice.

Ingredients

  • 3 cups brown rice
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 tbsp olive oil
  • 1 can tomato paste
  • 2 cloves garlic
  • 1 cup kidney beans
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 cup water

Directions

  • Heat olive oil in skillet.
  • Add onions, peppers and garlic.
  • When vegetables are soft add one cup water and can of tomato paste.
  • Add chili powder and cumin.
  • Stir in the cooked rice and drained and rinsed kidney beans.
  • Simmer 5 to 10 minutes.
