Ingredients

  • 1/2 small red onion
  • 1 cup red cabbage, chopped
  • 2 cups broccoli, chopped
  • 2 tbsps sour cream
  • 1 tbsp rice vinegar
  • 1/8 tsp calorie free sweetener
  • 3 tbsp mayonnaise
  • 1/4 cup mixed nuts

Directions

  • In a small bowl mix mayonnaise, sour cream and rice vinegar. Sweeten with zero calorie sweetener.
  • In a large bowl, combine chopped broccoli, chopped red onion and chopped red cabbage. Crush or chop nuts and add to bowl. Toss to combine.
  • Pour dressing over mixture in large bowl. Toss and season with salt and pepper.
  • Note: the key to keeping this low carb is to look for zero carb mayonnaise, vinegar and sweetener.
