Cauliflower Au Gratin Soup

Ingredients

  • 3 cans chicken broth
  • 1/4 cup chopped onions
  • 1/4 cup chopped green pepper
  • 16 oz velveeta light (reduced fat cheddar)
  • 3 cups cauliflower
  • 1 dash pepper

Directions

  • In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
  • Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
  • Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
  • Stir until cheese is melted.
  • Drain cauliflower and add to soup.
  • Pepper to taste.
  • While not thick like "real" cheese soup it's great for a cold Winter day!
