Ingredients

  • 2 tbsps peanut oil
  • 3 tsps ginger
  • 3 tsps garlic
  • 1 tsp mustard seed
  • 1 tsp cumin seed
  • 1 tsp clove
  • 1 hot chili
  • 1 tsp cumin
  • 1 tsp crushed red pepper
  • 1 tsp turmeric
  • 1 small whole tomato
  • 500 g red lentils
  • 1 unpeeled eggplant
  • 6 cups water

Directions

  • Sauté diced ginger and garlic in oil. When soft, add spices and fry for 30 seconds.
  • Add chopped tomato and eggplant. Stir well, coating all eggplant cubes.
  • Add lentils and water. Stir well.
  • Simmer on low heat until lentils are soft. Most of the water should be absorbed. Add salt to taste.
  • Can serve with yogurt, lemon juice and cilantro.
