  • 3 g bay leaves (three)
  • 1 dash black pepper
  • 1 tbsp dried rosemary
  • 1 tsp dried sage
  • 1 tsp leaves dried thyme
  • 1 dash sea salt
  • 3 tbsps olive oil
  • 7 cups chicken broth
  • 4 large carrots, chopped
  • 4 stalks medium celery
  • 6 cloves garlic, minced
  • 10 pieces crimini mushrooms, sliced
  • 10 shiitake mushrooms, sliced
  • 2 medium onions, chopped
  • 3 oz miso

Directions

  • Sauté onions, celery, garlic, herbs over medium heat in a large pot until onion and celery are translucent.
  • Add carrots and mushrooms and sauté for another 3 minutes.
  • Add broth, miso, bay leaves. Reduce heat and simmer for 20-30 minutes.
  • Taste, and season as desired.
