French Onion Soup

Very tasty and healthy soup that's low in sodium and fat.

Ingredients

  • 1 medium onion
  • 1 tsp low sodium beef broth powder
  • 1 cup water
  • 1/2 tbsp worcestershire sauce
  • 1 dash black pepper
  • 1 slice whole wheat bread
  • 1 oz skim mozzarella cheese
  • 1 tbsp low calorie margarine
  • 1 sprig parsley

Directions

  • Sauté onions in frying pan with margarine. (Optional to add a teaspoon of sugar to onions to caramelize).
  • Boil water.
  • Add a teaspoon of beef broth powder to boiling water, simmer.
  • Add pepper, Worcestershire sauce and onions to simmering broth.
  • Pour broth into an oven-proof bowl, add slice of bread, top with shredded mozzarella cheese.
  • Broil in oven until cheese is bubbly (does not take long so check oven every minute or so).
  • Add fresh parsley on top of soup. Enjoy!
