Spicy Split Pea Soup

A delicious split pea soup with a flavor you would not expect that gives it a real kick.

Ingredients

  • 1/2 cup chopped onion
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp chili pepper flakes
  • 3 cloves garlic
  • 1 bay leaf
  • 1 lb split peas
  • 8 cups chicken broth
  • 1 tbsp extra virgin olive oil

Directions

  • Heat oil in pot.
  • Add onions, salt, pepper, and chili flakes. Sauté for 2-3 minutes.
  • Add garlic, bay leaf and rinsed and drained peas. Sauté for 2 minutes.
  • Add chicken broth and bring to a boil.
  • Let simmer on medium heat until peas are tender (about 45 minutes ).
  • Once tender, find and remove bay leaf, then take hand blender and blend soup until desired consistency.
  • Serve with a dash of hot sauce. Enjoy!
