- 1/3 cup lime juice
- 1/4 cup cilantro, chopped
- 1 small scallion, chopped
- 1 tbsp extra virgin olive oil
- 1 serving 1 packet splenda
- 1/2 tsp salt
- 3 avocados
- 3/4 oz lemon juice (2 tbsp)
- 1 cup cherry cherry tomatoes, halved
- 1 cup shredded romaine lettuce
- 1 large yellow bell pepper, chopped
- 1 1/2 cups cauliflower
- 8 oz turkey ham, chopped
- 1/2 cup chickpeas
- 2 oz black olives, sliced (1/4 cup)
Directions
- To make lime dressing, in small bowl, mix lime juice, cilantro, scallion, oil, Splenda, and salt.
- Add avocados and mash to incorporate. Stir in picante sauce and lemon juice.
- To make tiered salad, in 2-quart glass salad bowl, arrange tomatoes, cut side down.
- Place greens over tomatoes. Top with bell pepper, then cauliflower, turkey ham, and chickpeas.
- Top with half of the lime dressing. Top the dish with olives.
- Serve with remaining dressing on the side. Garnish with more yellow pepper.
