Ingredients
- 1 cup red lentils
- 1 medium onion, chopped
- 2 cloves garlic, crushed
- 2 tsps cumin seeds
- 2 tsps turmeric
- 10 medium mushrooms, chopped
- 1 medium green sweet peppers
- 4 cups chicken stock
- 1 tsp olive oil
- 1 tsp curry powder
Directions
- Cover lentils with boiling water and allow to stand for 15 minutes.
- Heat olive oil in a pan and cook onions and garlic for 2 minutes.
- Add cumin seeds, turmeric and curry powder. Cook for 2 minutes until fragrant.
- Add mushrooms and green pepper. Stirfry for a further 2 minutes.
- Add stock and lentils. Cook over medium heat for 35-45 minutes, or until dhal thickens.
- Stir frequently to avoid sticking.
