A delicious morning adventure awaits with this avocado and smoked salmon omelet! Creamy avocado meets the smoky richness of salmon, all wrapped up in a fluffy egg blanket. Each bite is like a gourmet sunrise on a plate—fresh, savory, and totally worth getting out of bed for!
INGREDIENTS
1 teaspoon extra-virgin olive oil plus
1/2 teaspoon, divided
¼ avocado, sliced
2 large eggs
1 teaspoon low-fat milk Pinch of salt
1 ounce smoked salmon
1 tablespoon chopped fresh basil
INSTRUCTIONS
1. In a small bowl, beat eggs with milk and salt. In a small nonstick skillet, heat up 1 teaspoon of oil over medium heat.
2. Add the egg mixture and cook for one to two minutes, or until the bottom is set and the centre is still somewhat runny.
3. After flipping the omelette, heat for a further 30 seconds or until it sets. Move to a platter.
4. Add salmon, avocado, and basil on top. Pour in the last of the 1/2 teaspoon oil.
