Makes 2-3 cups

INGREDIENTS

1 tablespoon flaked sea salt
1 tablespoon dried chives
6-8 medium to large beets
Olive oil

INSTRUCTIONS

1. Trim and scrub the beets, leaving skins on. Use a mandoline or sharp knife to slice them thinly (1/16″).
2. Preheat oven to 400°F. Lightly oil a baking sheet to prevent sticking, then arrange beet slices in a single layer without overlapping. Bake on the bottom rack for 10-15 minutes until crisp.
3. While baking, mix salt and crushed dried chives. Once the beets are done, sprinkle with chive salt and let cool on the pan to crisp up. Transfer to a cooling rack, and repeat with remaining beet slices.
