INGREDIENTS

1 tablespoon extra-virgin olive oil
2 slices whole-grain bread, toasted
½ cup crumbled feta cheese
8 cups chopped kale
2 cloves garlic, minced
1 cup rinsed no-salt added canned chickpeas
Pinch of ground pepper

INSTRUCTIONS

1. In a big skillet, heat the oil over medium-high heat. Cook the garlic and kale for about 4 minutes, stirring periodically, or until the kale is tender.
2. Add salt, pepper, and chickpeas and stir. Divide the mixture equally among the toast slices. Add a feta sprinkle.
