Citrus Salad

Brighten your plate with a refreshing Citrus Salad! Bursting with juicy oranges, grapefruits, and a zesty dressing, this vibrant dish is the perfect balance of sweet and tangy. It’s a fresh, flavorful way to wake up your taste buds!

INGREDIENTS

For the Syrup

2 tablespoons water
1 large lemon
1/4 cup honey
1 vanilla bean, split lengthwise seeds removed

For the Salad

1 pink grapefruit
2 cara cara or navel oranges
2 blood oranges
2 kiwi
1 tablespoon fresh basil or mint, cut into ribbons (optional)
1/4 cup pomegranate seeds (optional)

INSTRUCTIONS

1. For the syrup, peel long strips of lemon zest, juice the lemon, and set aside. In a small saucepan over medium heat, combine honey, water, vanilla bean seeds and pod, lemon peel, and 1 tablespoon of lemon juice. Simmer for 5-8 minutes until infused and slightly thickened. Remove from heat.
2. For the fruit, slice off the top and bottom of the oranges, peel away the skin and pith, and slice into rounds. Repeat with the remaining oranges and kiwis. For the grapefruit, segment the fruit instead of slicing.
3. Strain the syrup, then gently toss the citrus and kiwi with the syrup. Add basil or mint ribbons. Serve in a bowl or arrange on a platter, garnishing with pomegranate seeds and extra herbs.
