INGREDIENTS
4 medium slices Greek sesame bread or crusty white bread
4 medium free-range eggs
90ml whole milk
4 spring onions, finely chopped
1 tbsp olive oil
Ground cinnamon for dusting
Honey for drizzling (Greek thyme honey if you can)
Greek yogurt to serve
Handful each fresh flatleaf parsley and dill, finely chopped
INSTRUCTIONS
1. In a shallow bowl, beat together eggs, milk, herbs, and spring onions. Season with salt and pepper. Soak bread slices in the mixture for 2-3 minutes, flipping to coat both sides.
2. Heat olive oil in a non-stick pan over medium heat. Cook the soaked bread for 2-3 minutes per side until golden and crisp. Repeat with remaining slices.
3. Serve with a dusting of cinnamon, a drizzle of honey, and a spoonful of yogurt.
