Juicy and tender, these chops take your taste buds on a Mediterranean adventure. Marinated in a medley of herbs and kissed by flames, every bite brings a smoky, charred flavor that’s perfect for a feast that’s both rustic and refined!
INGREDIENTS
1 tablespoon finely chopped fresh rosemary dried rosemary is not a good substitute here
8 lamb chops 3/4 inches thick
3 tablespoons extra-virgin olive oil
3 cloves garlic minced
1 teaspoon kosher salt or 1/2 teaspoon fine sea salt
freshly ground black pepper to taste
INSTRUCTIONS
1. Set the temperature of your stovetop grill pan or grill to medium-high.
2. In a small dish, mix together all marinade ingredients (pepper to olive oil). Evenly spoon this mixture over the lamb chops on both sides.
3. To achieve the required doneness, grill lambchops for 2 to 4 minutes on each side at 135°F for medium-rare. Before serving, transfer to a platter and allow to rest for five minutes.
