Grilled Salmon with Red Pepper Relish

Fire up the grill for a sizzling salmon that pairs perfectly with a sweet and smoky red pepper relish. Each bite delivers a dance of flavors—savory, tangy, and a little bit spicy—that turns a simple meal into a mouthwatering feast. Grill it up, relish it, and savor the freshness in every forkful!

INGREDIENTS

3 medium red bell peppers, quartered, seeds removed
½ medium red onion, cut into
1/2-inch-thick slices
1 medium jalapeño pepper
1 ½ pounds skin-on salmon fillet, cut into 4 portions
½ teaspoon salt, divided
¼ teaspoon ground pepper
2 tablespoons lime juice
2 tablespoons extra-virgin olive oil
1 tablespoon agave syrup
¼ cup chopped fresh cilantro
2 teaspoons capers, rinsed and chopped

INSTRUCTIONS

1. Set the grill up to medium-high and grease the rack. Grill salmon with seasonings for about 6 to 12 minutes, or until it’s fully cooked.
2. Toss the vegetables, parsley, and capers together after adding them. Put relish on top of the fish.
3. Grill bell peppers, onion, and jalapeño until charred, approximately 5-6 minutes.
4. Cut up the veggies and the jalapeño cloves.
5. Mix the oil, agave, lime juice, and salt together in a bowl.
