INGREDIENTS
1 lemon, zested and juiced
1/4 cup Crème fraîche, for serving
5 tablespoons cornstarch
1 pound strawberries, stems removed and quartered
5 to 6 tablespoons raw sugar turbinado
1/4 cup honey, or more to your liking, to finish
Basil leaves, small or torn, for garnish
INSTRUCTIONS
1. In a medium bowl, whisk cornstarch with 1 cup of cold water until fully combined, then set aside. In a large food processor, add strawberries, sugar, and lemon juice. Puree the mixture until smooth, adjusting sweetness if necessary.
2. Transfer the strawberry puree to a saucepan over medium heat. Stir in the cornstarch mixture and cook, stirring constantly, until the mixture thickens, about 5-7 minutes. Be sure to avoid boiling or burning.
3. Remove from heat and pour the thickened mixture into dessert cups. Let cool, then refrigerate for at least 2 hours or overnight.
4. To serve, top with crème fraîche (if desired), drizzle with honey, and garnish with lemon zest and basil.
