Keto Air Fryer Loaded Zucchini Skins

INGREDIENTS

1 c. shredded cheddar
1 large avocado, halved, pitted, and flesh scooped
Olive oil cooking spray
2 slices turkey bacon
2 medium zucchini (about 1 lb. total)
1/2 tsp. kosher salt
Freshly ground black pepper
3 cherry tomatoes, finely chopped
1 Tbsp. finely chopped red onion
1 Tbsp. fresh lime juice
1 tsp. finely chopped fresh cilantro leaves, plus more for serving
1 small jalapeño, stemmed, seeded, and finely chopped, divided

INSTRUCTIONS

1. Spray air-fryer basket with cooking spray. Place bacon in basket and cook at 350° for 5 minutes, flipping halfway through. Cut bacon on a board. Let cool slightly before finely chopping.
2. Meanwhile, cut zucchini lengthwise and crosswise in half. Scoop seeds with a teaspoon to make 8 1/4″-thick boats. Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on zucchini and lightly coat with cooking spray.
3. In an air-fryer basket, place zucchini cut-side up in a single layer, 1/8″ apart. Bake at 400° for 7 minutes until soft and golden-spotted.
4. The air-fryer basket will be hot, so carefully stuff zucchini with cheese. Return to air fryer and cook 1-2 minutes further at 400° until cheese is bubbling and brown.
5. Mash avocado in a medium basin with a fork. Add tomatoes, onion, lime juice, cilantro, 2 tsp jalapeño, and 1/4 tsp salt
6. Place zucchini boats on a plate. Put guacamole in zucchini boats. Add bacon, cilantro, and remaining jalapeño on top.
