Delicious almond-infused bread is toasted to golden perfection before being dipped in a thick egg batter in this breakfast treat. This low-carb version of a traditional favorite tastes decadent without the guilt thanks to the cinnamon and sugar toppings. Have a bowl of this luscious, nutty delight first thing in the morning and enjoy every bite!
INGREDIENTS
1 Tbsp unsweetened almond milk plain
1 Tbsp almond meal
1 drop of vanilla extract
2 tsp smart balance spread regular
2 slices 100% wholegrain bread
1 free range large egg organic, pasture-raised
1/2 tsp confectioner sugar optional
INSTRUCTIONS
1. Whisk the egg, almond milk, almond meal, and vanilla essence in a shallow bowl. Coat both sides of each slice of bread equally with the egg mixture. Put aside.
2. In a large enough nonstick skillet to accommodate both slices of bread, heat the smart balance spread. Cook the bread for two to three minutes on each side over medium heat. Dust with confectioner’s sugar to serve.
