Keto Bacon Egg and Cheese Breakfast Casserole

This Keto Bacon Egg and Cheese Breakfast Casserole will give your mornings a delicious boost! Indulge in a low-carb meal that will satisfy your hunger all day long with its layers of crispy bacon, fluffy eggs, and gooey cheese. Quick to whip up and oh-so-delicious, this breakfast staple is the perfect way to kick off your ketogenic diet.

INGREDIENTS

3 c. frozen hash browns thawed
⅓ c. green onion chopped
½ tsp. salt
1.5 c. cheddar cheese shredded
5 large eggs
½ c. milk
5 slices bacon cooked to crisp and drained well

INSTRUCTIONS

1. Chop the bacon and cook it until it becomes crispy. After setting aside, drain. Roughly chop the green onions.
2. Whisk the milk and eggs together until thoroughly combined. Add the hash browns, green onions, salt, and about 4 bacon slices and stir.
3. Transfer to a 9×13″ baking pan. Add a cup of cheese and stir. Bake for 30 to 45 minutes, or until the eggs are set, at 350 degrees. Add the remaining cheese and bacon on top right away. Serve after cutting into squares.
