Keto Baked Lemon Herb Salmon

INGREDIENTS

2 Tablespoons unsalted butter, melted
2 Tablespoons chopped fresh rosemary (or use 1 Tablespoon dried)
2 Tablespoons chopped fresh parsley (or use 1 Tablespoon dried)
4 salmon fillets, skin removed (about 2 lbs. (900g) total)
4 cups halved brussels sprouts
1 Tablespoon minced garlic
2 medium lemons, divided
1/2 teaspoon freshly ground black pepper, divided
sea salt, to taste

INSTRUCTIONS

1. Preheat oven to 400°F (204°C). Cover a baking sheet with parchment or silicone. Place salmon and brussels sprouts evenly on top.
2. Put melted butter on each salmon fillet. Mix rosemary, parsley, garlic, 1 lemon juice (4 tablespoons), and 1/4 teaspoon pepper in a small bowl. Spread evenly on each fillet.
3. Slice half the second lemon and place 1-2 slices on each fillet. Squeeze the second lemon half over the sprouts. Sprinkle remaining 1/4 teaspoon pepper on brussels sprouts.
4. Sprinkle sea salt evenly over the pan—a little is enough, but use your liking. Bake the salmon for 15-20 minutes, or 10 minutes per 1-inch thickness from the thickest section of the fillet, until it achieves 145°F (63°C) internal heat.
