INGREDIENTS
1/4 c. grated Parmesan
1 tsp. chili powder
1/2 tsp. paprika
1/2 tsp. garlic powder
Cooking spray
6 oz. pork rinds
1/2 tsp. dried oregano
Kosher salt
2 large eggs, beaten
Freshly ground black pepper
1 lb. large shrimp
For the sauce:
Juice of 1/2 lemon
Dash of hot sauce
Freshly chopped parsley1/2 c. mayonnaise (or sour cream)
INSTRUCTIONS
1. Turn the oven on at 450°. Apply cooking spray to a large rimmed baking sheet. In a food processor or bag suitable for a rolling pin, crush the pork rinds into tiny crumbs. Add the herbs, spices, and Parmesan cheese to a medium-sized shallow bowl. Add salt and pepper to taste.
2. Place whisked eggs into a small bowl. Dredge shrimp in eggs, then coat with pork rind mixture.
3. Arrange the breaded shrimp in a single layer on the baking sheet. Once the coating is crispy and the shrimp are cooked, bake for 10 to 12 minutes.
4. In a small bowl, combine mayonnaise, lemon juice, and hot sauce. Serve the shrimp with a parsley garnish.
