INGREDIENTS

1/3 cup heavy cream
1/3 cup cheddar grated
1 cup broccoli chopped
4 large eggs
Pinch of salt and black pepper

INSTRUCTIONS

1. Set the oven’s temperature to 350°F. Use cooking spray or olive oil to coat the mini muffin pan.
2. Grate cheese and chop broccoli. Then, in a bowl, whisk the eggs and combine with the remaining ingredients, excluding the cheddar cheese.
3. Mix thoroughly until everything is combined. Fill the mini muffin pans with the batter. They should be around 2/3 full.
4. Sprinkle grated cheese over the mini muffins and bake for 10-12 minutes, or until the egg pieces are thoroughly cooked.
5. Allow the mini muffins to cool completely before serving.
