Keto Cheesecake Stuffed Strawberries

INGREDIENTS

2 tablespoon butter softened
⅓ cup powdered Swerve Sweetener
1 lb fresh strawberries (larger ones work best)
6 ounces cream cheese softened
¼ cup heavy whipping cream
1 teaspoon vanilla extract
¾ cup fresh blueberries
¼ cup mini sugar-free chocolate chips (optional)

INSTRUCTIONS

1. Keep the strawberry hulls while washing. Cut the hulls in half and connect a bit to each side.
2. To hollow out each strawberry half, use a sharp knife to cut through the center. In a large mixing bowl, combine the cream cheese and butter until completely smooth. Add the sweetener and mix thoroughly.
3. Fold in the whipped cream and vanilla. If your filling is too thick and hard, stir with 1-2 teaspoons unsweetened almond milk or water. Fill a piping bag shaped like a star.
4. Fill a star-shaped piping bag. Pipe the filling onto the strawberry halves. Place two to three blueberries or little chocolate chips on each. Refrigerate until serving time.
