INGREDIENTS

¼ cup BochaSweet
2 ¼ cups heavy whipping cream divided
½ cup unsweetened almond milk (or hemp milk for nut-free)
½ cup powdered Swerve Sweetener divided
2 tablespoon butter
¼ teaspoon xanthan gum
1 to 1 ½ tablespoon instant coffee
¾ teaspoon vanilla extract

INSTRUCTIONS

1. Mix 1 cup of cream and almond milk in a medium saucepan over medium heat. Mix with ¼ cup Swerve and Bocha Sweet.
2. After boiling, lower heat and simmer 40 minutes, whisking occasionally. Remove from heat and add butter. Mix until butter melts. Sprinkle xanthan gum on top and stir vigorously.
3. Mix instant coffee and vanilla essence until granules dissolve. Cool to room temperature.
4. Whip 1 ¼ cups whipping cream with remaining Swerve sweetener until stiff peaks form. Fold the cooled coffee mixture gently until well mixed.
5. Place in a jar and freeze for 5–6 hours.
