INGREDIENTS
1/4 teaspoon salt
4 oz cream cheese softened
2/3 c. almond flour blanched almond flour
1/4 c. granulated sweetener of choice monk fruit sweetener or erythritol
4 large eggs room temperature
1/4 cup milk of choice
INSTRUCTIONS
1. Mix the dry ingredients in a small bowl and stir to combine. In a high-speed blender, combine the milk, egg, and softened cream cheese. Blend the dry ingredients in until they are smooth. In the mixing bowl, let the pancake batter thicken for ten minutes.
2. Coat a nonstick pan or skillet with butter or spray. After heating, add 1/4 cup pancake batter to the pan and swirl to spread.
3. Cook for a further two to three minutes after flipping. Turn off the heat. Grease the pan again and continue until all of the batter has been used. Make crepes with your favorite fillings and enjoy.
