INGREDIENTS

1 tsp. Dijon mustard
1/4 c. mayonnaise
1 tsp. hot sauce
6 large eggs
Freshly ground black pepper
Kosher salt
Sliced chives and smoked paprika, for serving

INSTRUCTIONS

1. Heat up a large pot of water (approximately 8 cups) until it boils. Use tongs or a slotted spoon to gently lower each egg into the water. Bring it to a boil, put a lid on it, lower the heat to medium-low, and cook for 12 minutes. Pour roughly two cups of ice and three cups of water into a big basin and let sit for three minutes before the eggs are done. Place the eggs in the freezing water. Give it a good thirty seconds to settle. After draining, peel and wash the eggs with cold water.
2. Cut eggs lengthwise and scoop out the yolks into a medium basin. Toss in the mayonnaise, mustard, and spicy sauce. Using the back of a fork, crush the yolks and stir until smooth. Season with salt and pepper.
3. On a dish, arrange the egg whites. Spoon the egg yolk mixture into the egg whites using a piping bag fitted with a star tip (or a resealable bag with a little corner cut off). Garnish with paprika and chives.
