1 celery stalk, diced
1/2 red onion, diced
2 scallions, sliced
1 lb (450g) cooked chicken, diced
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
2 teaspoons lemon juice
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon salt
INSTRUCTIONS
1. To prepare the chicken salad, place the chopped chicken, red onion, celery, scallion, mayo, mustard, salt and pepper in a big salad bowl.
