INGREDIENTS
1/2 cup Marinara sauce
2 tbsp Olive oil
1/4 tsp Sea salt
1/8 tsp Black pepper
1 tsp Italian seasoning
1 oz Mini pepperoni slices
1 1/2 cups Mozzarella cheese (shredded)
1 lb Eggplant (cut into uniform 1/2″ thick slices)
INSTRUCTIONS
1. Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
2. Arrange eggplant slices in a single layer on the sheet. Brush or spray with olive oil and sprinkle with sea salt and black pepper.
3. Bake for 15 minutes until soft and golden.
4. Spread 2 teaspoons marinara sauce on each slice, sprinkle with 2 tablespoons shredded cheese, and top with Italian seasoning and pepperoni.
5. Set oven to broil or 500°F (260°C). Broil for 5 minutes until cheese is melted and slightly browned.
