This Keto Garlic Butter Shrimp and Cauliflower Rice recipe is a culinary extravaganza! Fluffy cauliflower rice is the ideal complement to the juicy shrimp sautéed in creamy garlic butter in this appetizing recipe. With every mouthful, you can take your taste buds on a whimsical, low-carb vacation.
INGREDIENTS
20 ounces Riced cauliflower
½ cup Salted butter, melted
1 tablespoon minced garlic
2 teaspoon dried, chopped, parsley
1 ½ lbs Raw large frozen shrimp, thawed, peeled, and deveined
½ teaspoon Kosher salt
¼ teaspoon fresh ground black pepper
INSTRUCTIONS
1. Set oven temperature to 400 degrees Fahrenheit. Remove the cauliflower florets and stem by cutting them out. In a food processor, pulse the florets until they resemble rice.
2. The supermarket store offers frozen or fresh riced cauliflower. In a microwave-safe container, microwave frozen “rice” chunks in 30-second increments to break them up.
3. To a large bowl, add the cleaned and thawed shrimp, butter, parsley, garlic, salt, and black pepper. Mix to combine.
4. In the bowl, combine the riced cauliflower. Arrange the combination of shrimp and cauliflower in a single layer on a sheet pan. Bake for fifteen minutes.
