INGREDIENTS

1 tablespoon minced garlic, or to taste
2 tablespoons unsalted butter
2 pounds frozen riced cauliflower, thawed
1/4 teaspoon ground black pepper
1 pinch nutmeg, or to taste
1/2 cup chicken broth
1 tablespoon snipped fresh chives for garnish (optional)
1 teaspoon salt, or to taste

INSTRUCTIONS

1. In a big skillet over medium heat, melt butter. Add the minced garlic and heat for about 30 seconds, or until fragrant.
2. Mix in the thawed, riced cauliflower, salt, pepper, and nutmeg. Add the chicken broth and bring to a boil, stirring frequently.
3. Cook for about 8 minutes with a lid on; after that, take off the lid, cook and stir for an additional 5 to 8 minutes, or until most of the liquid evaporates.
4. Puree the cauliflower with an immersion blender until it’s smooth. If you don’t have an immersion blender, simply pour cauliflower into a blender and purée. Once blended, transfer to a serving basin and top with finely chopped chives.
