1 Tbsp. parsley, finely chopped
1/2 lb. sliced salami, about ⅛-inch thick
1/2 c. mayonnaise
2 Tbsp. red wine vinegar
2 tsp. Dijon mustard
1 tsp. dried oregano
kosher salt
Freshly ground black pepper
INSTRUCTIONS
1. Adjust the oven temperature to 325° and place parchment paper on a medium baking sheet. Spread the salami out in a single layer on the baking sheet and bake for 20 to 25 minutes, or until crisp.
2. Meanwhile, to make the sauce, put the remaining ingredients in a medium-sized bowl. Blend until silky.
