INGREDIENTS
2 cups julienned or grated carrots
2 tablespoons packed light brown sugar
2-4 Thai chiles, very thinly sliced, or 1 teaspoon crushed red pepper
2 teaspoons lime zest
3 cups low-sodium chicken broth
3 shallots, very thinly sliced
4 pounds skin-on, bone-in chicken breasts
½ cup lime juice
⅓ cup sliced fresh mint
⅓ cup sliced fresh basil
¼ cup fish sauce
INSTRUCTIONS
1. In a 6-quart slow cooker, combine broth, shallots, fish sauce, brown sugar, chilies (or crushed red pepper), and lime zest. Place the chicken in the soup, meat side down. Cook for three hours on high or six hours on low heat.
2. Transfer the chicken to a clean chopping board. Shred the meat and discard the skin. Put the chicken back into the slow cooker and mix in the carrots, basil, lime juice, and mint.
