INGREDIENTS

100 grams Baby Spinach
20 grams Heavy Cream/Double Cream
1/2 Tsp Dried Oregano
3 Eggs
3 Rashers bacon Optional
50 grams Feta Cheese
1/2 Tsp Black Pepper
15 grams Butter
1/4 Tsp Red Chilli Flakes
Salt to Taste
1 Tbsp Avocado Oil If not using bacon

INSTRUCTIONS

1. Crack the eggs with salt, pepper, dried oregano, and heavy whipping cream in a bowl and beat thoroughly. After frying the bacon in a cold pan to your preference, set it aside. Chop bacon. If not using bacon, heat avocado oil in the pan.
2. Cook spinach in bacon grease until wilted. Add a pinch of salt. Add butter and stir after wilting. Pour the eggs into the pan and stir well, then reduce the heat to low, crumble the feta, and top with the chopped bacon.
3. Close the lid and cook the egg for 4 minutes on low heat until fully done. You can fold or grill the omelet. After cooking, garnish the egg with chilli flakes and enjoy. This 3-egg recipe serves one.
