INGREDIENTS
6 fried eggs
2 tablespoons chopped fresh chives
1 small shallot, diced
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/3 cup extra virgin olive oil
1/2 cup chopped fresh parsley leaves
1/2 cup chopped fresh basil
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper, to taste
1 1/2 pounds skirt steak
1 tablespoon canola oil
INSTRUCTIONS
1. Combine the parsley, basil, shallot, garlic, and red pepper flakes in a medium-sized bowl. Mix in the vinegar and olive oil, then season to taste with salt and pepper.
2. Pat the steak dry on both sides with paper towels, then season with 1/2 teaspoon pepper and 1 teaspoon salt.
3. Heat a large cast iron skillet over medium-high heat for 1-2 minutes, then add the canola oil.
4. In the middle of the pan, place the steak. Cook for about 4 to 5 minutes, or until a dark crust forms. Flip with tongs and cook for another 3-4 minutes, or until desired doneness. Allow to rest for five minutes.
5. Slice the steak thinly against the grain and serve with the parsley mixture and eggs.
