Savor the sunshine with Mediterranean Avocado Tuna Salad! This delightful mix combines creamy avocado with savory tuna, bringing a burst of Mediterranean flair to your plate. It’s a fresh, fun, and flavorful way to brighten up any meal!

INGREDIENTS

2 (5 ounce) cans solid white tuna in oil, drained and flaked
4 cups romaine hearts
1 cup chopped English cucumber
3 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
¼ teaspoon salt
2 medium avocados, chopped (about 2 1/2 cups)
1/3 cup crumbled feta cheese¼ cup toasted sliced almonds
¼ cup chopped pitted Kalamata olives
3 tablespoons chopped fresh flat leaf parsley

INSTRUCTIONS

1. Mix oil, lemon juice, and salt in a big bowl with a whisk.
2. Add the avocados and toss them in slowly to coat.
3. Then, add the parsley, feta, almonds, olives, lettuce, cucumber, and tuna.
4. Gently toss everything together. Put it in the fridge for up to an hour or serve it right away.
