INGREDIENTS

2 cups cherry tomatoes
2 cups baby spinach (packed)
1 to 2 garlic cloves (minced)
1 1/2 cups hummus (homemade ahead or quality store-bought)
seasoning of your choice
4 eggs, cooked to your liking
8 ounces white button mushrooms (halved)
extra virgin olive oil
Kosher salt
olives (optional)

INSTRUCTIONS

1. Cook eggs to your liking (soft boiled, scrambled, sunny-side up, etc.). Boiled eggs can be made in advance and refrigerated.
2. Heat 2 tablespoons olive oil in a large skillet. Cook mushrooms with salt until browned, about 7 minutes.
3. Add cherry tomatoes, spinach, and garlic. Season with salt and cook for 2-3 minutes until tomatoes are warmed and spinach wilts.
4. Assemble bowls: Divide mushroom, spinach, and tomato mixture among 4 bowls. Add eggs and hummus. Optionally, drizzle extra virgin olive oil over the hummus.
5. Add seasonings of choice (e.g., Aleppo pepper, za’atar).
