4 (6 ounce) skinless, boneless chicken breasts
2 ounces goat cheese
1 tablespoon minced fresh parsley
2 teaspoons fresh thyme
1 garlic clove, grated
½ teaspoon kosher salt
½ teaspoon pepper
1 tablespoon olive oil

INSTRUCTIONS

1. Mix parsley, thyme, goat cheese, and grated garlic. Cut a pocket in each chicken breast and stuff with the mixture.
2. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat.
3. Cook chicken for about 6 minutes on each side.
