INGREDIENTS
15g butter
1 tbsp extra virgin olive oil
1 tbsp thickened cream
2 garlic cloves, finely chopped
2 x 250g packets zucchini noodles
100g cream cheese, chopped
1/4 cup finely grated parmesan, (plus extra to serve)
INSTRUCTIONS
1. In a frying pan, heat the oil and butter over medium-high heat until the butter becomes frothy. Put the noodles made of zucchini in. Toss periodically with tongs for 1-2 minutes, or until slightly wilted. Using tongs, transfer to a plate.
2. Put the garlic in the skillet. Stir and cook for 1 minute, or until fragrant. Add the cream cheese, cream, and 60ml (or 1/4 cup) of water. Adjust to low heat. Cook for 3 minutes, stirring frequently, or until mixture is smooth.
3. Add seasoning and stir in the parmesan. Add the zucchini and stir to mix using tongs. Serve with additional Parmesan.
