Ingredients

  • 1/4 tsp salt
  • 2 tbsps rice vinegar
  • 1/2 cup almonds
  • 1/2 cup dried cranberries
  • 2 tbsps 100% maple syrup
  • 1/4 cup extra virgin olive oil
  • 1/2 cup red quinoa
  • 1/2 cup white quinoa
  • 2 large scallions

Directions

  • Combine white quinoa, red quinoa and 1 1/2 cups of water in a pot. Bring to a boil, reduce heat, cover pot and simmer for 15-20 minutes.
  • Remove pot from heat and allow quinoa to steam for another 10 minutes. Transfer quinoa to bowl, fluff and cool to room temperature.
  • Add cranberries, almonds and chopped scallions.
  • In a separate bowl, make the dressing: rice vinegar, olive oil, maple syrup and salt.
  • Add dressing to quinoa mixture and mix well.
