  • 24 oz baby arugula
  • 1 cup red onion, slices
  • 12 grape tomatoes
  • 6 tbsps olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp unpacked brown sugar
  • 2 tbsps red wine vinegar
  • 2 oz feta cheese
  • 16 oz beef inside skirt steak (lean only, trimmed to 1/4" fat)

Directions

  • Cook onion in balsamic and brown sugar set aside.
  • Heat 1 tablespoon olive oil and heat steak seasoned with pepper and salt.
  • Prepare arugula and tomatoes.
  • Mix red wine vinegar and olive oil for dressing.
  • Toss all of ingredients together.
