- 24 oz baby arugula
- 1 cup red onion, slices
- 12 grape tomatoes
- 6 tbsps olive oil
- 1 tbsp balsamic vinegar
- 1 tsp unpacked brown sugar
- 2 tbsps red wine vinegar
- 2 oz feta cheese
- 16 oz beef inside skirt steak (lean only, trimmed to 1/4" fat)
Directions
- Cook onion in balsamic and brown sugar set aside.
- Heat 1 tablespoon olive oil and heat steak seasoned with pepper and salt.
- Prepare arugula and tomatoes.
- Mix red wine vinegar and olive oil for dressing.
- Toss all of ingredients together.
