  • 1 cup dry roasted peanuts
  • 5 sprigs cilantro, chopped (1 bunch)
  • 5 leaves mint (1 bunch)
  • 250 g cabbage, chopped
  • 2 large carrots, grated
  • 5 large spring onions, chopped
  • 100 g crispy noodles
  • 1 tbsp chopped fried shallots
  • 0.12 cup sweet chili sauce
  • 0.1 cup water (30 ml)
  • 2 limes yield limes, rind and juice
  • 7 oz light sour cream (200 ml)
  • 5 tsps palm sugar

Directions

  • Combine chopped vegetables and herbs.
  • Prepare dressing and add to vegetables.
  • Top with fried shallots, peanuts and noodles.
