- 1 cup dry roasted peanuts
- 5 sprigs cilantro, chopped (1 bunch)
- 5 leaves mint (1 bunch)
- 250 g cabbage, chopped
- 2 large carrots, grated
- 5 large spring onions, chopped
- 100 g crispy noodles
- 1 tbsp chopped fried shallots
- 0.12 cup sweet chili sauce
- 0.1 cup water (30 ml)
- 2 limes yield limes, rind and juice
- 7 oz light sour cream (200 ml)
- 5 tsps palm sugar
Directions
- Combine chopped vegetables and herbs.
- Prepare dressing and add to vegetables.
- Top with fried shallots, peanuts and noodles.
