Ingredients

  • 5 small yellow summer squashes
  • 100 g green peas
  • 10 pieces brown mushrooms (crimini italian)
  • 2 cups sliced red onions
  • 3 medium potatoes
  • 1 tbsp olive oil

Directions

  • Chop onions and mushrooms, sauté in a pan with olive oil over medium heat, and cook for 5-10 minutes.
  • Cut squash in pieces and add to the pan.
  • Add peas, mix and cover with lid. Cook on low heat for 15 minutes.
  • Boil potatoes in a separate pan with water until done. Cut in squares and add to the other vegetables.
  • Season as desired and turn off heat.
