- 2 large eggs
- 2 slices bacon
- 1/2 cup cooked mushrooms
- 1/2 cup cooked red peppers
- 1/4 cup shredded fat free mozzarella cheese
- 1 tbsp fat free sour cream
Directions
- Pre-heat oven to 350 °F (175 °C).
- Cook and crumble bacon and stir fry vegetables, no oil.
- Whisk eggs and sour cream in a 9" pie plate sprayed with non-stick cooking spray.
- Stir in crumbled bacon, vegetables and cheese.
- Bake for 30 minutes or until top is golden brown.
