Ingredients

  • 75 g wholemeal brown rice
  • 1 large red onion, chopped
  • 4 medium mushrooms, chopped
  • 31 g lean bacon (2 slices)
  • 1 cube beef stock

Directions

  • Add wholemeal brown rice to saucepan of water and boil for the amount of time stated on packet.
  • Fry chopped onion and mushrooms in another saucepan using low calorie spray. Alternatively, you could boil in water until tender.
  • Grill or microwave 2 slices of lean bacon until tender.
  • Add beef stock cube (e.g. Oxo) to rice when nearly cooked and stir in.
  • Add cooked onions, mushrooms and chopped bacon to rice, before serving and stir in. Keep stirring until water is absorbed.
  • Can be eaten on its own or add zero point vegetables such as carrots, cauliflower, broccoli, green beans.
