Baked Sweet Onion Omelet

Easy, low calorie baked omelet that even my kids love.

  • 9 large eggs
  • 3 large egg whites
  • 1 cup asparagus
  • 8 tbsps sweet onion salsa
  • 4 oz fat free cheddar, shredded
  • 1/2 cup pieces turkey bacon
  • 3 tbsps parmesan cheese
  • 1 tbsp pepper
  • 2 tsps season salt
  • 6 oz fat free sour cream

Directions

  • Pre-heat oven to 400° F (200° C).
  • Cut bacon into pieces and fry in a pan.
  • Cool cooked bacon on a paper towel.
  • Mix all ingredients together except for the sour cream when the bacon is cool.
  • Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.
  • Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.
  • Cut eggs into 6 pieces and serve with sour cream on top.
