Baked Sweet Onion Omelet
Easy, low calorie baked omelet that even my kids love.

- 9 large eggs
- 3 large egg whites
- 1 cup asparagus
- 8 tbsps sweet onion salsa
- 4 oz fat free cheddar, shredded
- 1/2 cup pieces turkey bacon
- 3 tbsps parmesan cheese
- 1 tbsp pepper
- 2 tsps season salt
- 6 oz fat free sour cream
Directions
- Pre-heat oven to 400° F (200° C).
- Cut bacon into pieces and fry in a pan.
- Cool cooked bacon on a paper towel.
- Mix all ingredients together except for the sour cream when the bacon is cool.
- Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.
- Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.
- Cut eggs into 6 pieces and serve with sour cream on top.
