Ingredients

  • 1/2 large diced red bell pepper
  • 1/2 large diced green bell pepper
  • 3/4 cup sliced yellow squash
  • 1/2 tsp ground basil
  • 2 tsps balsamic vinegar
  • 2 tsps minced garlic
  • 1 cup pieces or slices mushroom
  • 3/4 cup chopped zucchini
  • 2 Italian tomatoes
  • 1 small whole roma tomato
  • 2 fl oz water

Directions

  • Cut vegetables into small bite size pieces.
  • Spray pan with cooking spray (like Pam).
  • Sauté minced garlic over medium heat for 30 seconds or so.
  • Add vegetables, seasonings, water and balsamic vinegar.
  • Stir to coat vegetables.
  • Cover pan with lid and steam for 10-15 minutes until just tender. Stir occasionally.
