Ingredients

  • 3 medium bananas
  • 1 cup blueberries
  • 2 large white eggs
  • 1 tsp vanilla extract (imitation, no alcohol)
  • 1/2 tsp baking powder (sodium aluminum sulfate, double acting)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 275 g almond flour blanched

Directions

  • Mash bananas until no clumps.
  • Mix wet ingredients together.
  • Mix dry ingredients in separate bowl.
  • Combine the two mixtures.
  • Distribute evenly in muffin tins and bake at 350°F for 30-35 minutes.
