  • 1 cup mashed banana
  • 1 3/4 cups flour
  • 3 tsps egg replacer
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 1/2 oz vegetable shortening
  • 4 tbsps semi sweet chocolate chips

Directions

  • Preheat oven to 350 °F (175 °C).
  • Cream together shortening and sugar.
  • Add egg replacer (mixed with water following directions on the box). Beat well.
  • Sift in dry ingredients and combine. Add banana and continue mixing. Stir in chocolate chips.
  • Divide into 6 parts of a greased muffin pan.
  • Bake for 30-35 minutes. If using loaf pan you'll need to increase bake time by 10 minutes.
