- 1 cup mashed banana
- 1 3/4 cups flour
- 3 tsps egg replacer
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 1/2 oz vegetable shortening
- 4 tbsps semi sweet chocolate chips
Directions
- Preheat oven to 350 °F (175 °C).
- Cream together shortening and sugar.
- Add egg replacer (mixed with water following directions on the box). Beat well.
- Sift in dry ingredients and combine. Add banana and continue mixing. Stir in chocolate chips.
- Divide into 6 parts of a greased muffin pan.
- Bake for 30-35 minutes. If using loaf pan you'll need to increase bake time by 10 minutes.
